Wilton Giant Cupcake Pan and Homemade Fondant!!!!

Hey everyone!!! I hope you all have wonderful Christmases and magical New Years!
One of my gifts from my mom was the Wilton Giant Cupcake Pan. It was kinda a joke between us because apparently she thought I was going to think it was coolest thing in the world, but ended up finding out before Christmas that I actually thought they were played out and lame, haha!
Well, I told her I would make her a Giant Cupcake for her birthday, which was on the 3rd, and I actually had a lot of fun with it. Cue the 'Seeeeeee' from my mom, LOL...

I also thought it would be a great opportunity to try out a homemade fondant recipe I've been eyeing. I went with a chocolate cake recipe with chocolate frosting on top, and a coconut cream filling (just buttercream with chopped sweetened coconut). Remember since this cake is a lot deeper than an average cake pan, to adjust your bake time around ten minutes....I think my cake baked for about 40 minutes.
I then did a crumb coat, wrapped it and let it sit overnight. I made the fondant, let that rest, and applied the fondant, filling, and then frosted and decorated the top. I didn't use a tip because I was being lazy, but it still turned out fine. Here is the video for the fondant from The Twisted Sifter.


If you've ever tried fondant, and are anything like me, you know the taste is awful, gummy, and plain undesirable. It is so essential to making beautiful detailed cakes, though. This marshmallow fondant is an awesome alternative. It tastes good and was easy to work with. I have never used fondant before, so I can't compare. If anyone has used both, comments would be appreciated! I'd love to hear how you feel about the different types of fondants.

  1. I think it turned out cute. I made one for my daughters first birthday and filled it with pudding. It was a nice mess :)
